VINEYARD | The production of Amarone, contrary to the majority of the great wines of the world, puts at the centre of the objective not only the vineyard but also the selection of the bunches that best lend themselves to the long drying period. This means that the appreciated bottles are therefore creatures of a targeted selection of bunches from several plots, the result of a very deep study. Decem can rely on hilly and foothill vineyards in the area of San Floriano, Masua and Marega, where corvina, corvinone and rondinella have always lived.
PERSON | Pietro Zardini, cheeky face and attitude, actually boasts thirty years of experience in the Valpolicella area, first as a consulting oenologist, then personally taking care of the winery founded by his grandfather Leone. Great familiarity with all the Verona denominations but innate passion for the wines of Valpolicella, interpreted with great respect for grape varieties and traditions and above all with patience, allowing the wines to reach maturity with due slowness.
WINE | Decidedly original birth and ageing for this Amarone. The grapes rest in a loft for about 90 days before pressing which therefore takes place around Christmas. The vinification in a truncated conical vat is followed by a long period of rest in terracotta amphora which lasts for at least three years, followed by another 3 years in oak barrels and a further 2 in barriques and a suitable rest in glass before presentation. The result is a wine of great aromatic depth, with ripe and fleshy cherries that stand out against a background of spices and medicinal herbs. In the mouth it amazes with how well it gives a full, soft and welcoming sip and at the same time staying intact and vital. The natural sweetness of a wine obtained from dried grapes for so long is resolved in very few grams of sugar which find a response in the acidic and savoury boost of the wine.
