I love how well the light biscuit and bread-crust character is integrated into the notes of fresh citrus and white blossom. Very taut and steely on the palate, which is nonetheless full-bodied and very intense. The bubbles are wonderfully compact – 2019 release Among the different terroirs of Chardonnay, Chouilly is well known for its lively, ample and elegant wines. Our family has its wine-making roots in Chouilly and we never stop exploring the wealth of possibilities offered by the village. Staying genuine is our guiding value when making this wine as we want to reveal without ever denaturing. – Creation & Maturation – This Blanc de Blancs champagne embodies the full diversity offered by Chouilly, as a true incarnation of our estate. Every plot of the family contributes to seal the final assemblage. This wine is maturated in vats for 8 months and four years in bottles. After the “dégorgement“ the bottles rest again inside our cellars for at least three more months.
