Lambrusco Grasparossa di Castelvetro – The smallest wine-producing region located south of the town of Modena. Appropriately named Grasparossa, meaning “red stalk,” the stalk and leaves turn red in the fall just before harvest on this strain of Lambrusco. The region is home to Grasparossa of which the DOC requires 85% of the wine to be composed of lambrusco. The wine of this region is typically full bodied with a deep purplish-red colour.

Grasparossa produces the most tannic Lambrusco, suitable for pairing with fried snacks. Fruity aromas of tart red cherries mingle with notes of savory spices. On the palate, penetrating semi-sweet berry flavors come through with precision. The pure fruit and lively acidity is balanced perfectly by clean tannins on the finish.

Grapes are harvested in the second, third week of September, vinified in contact with skins and maceration of 3-5 days. and the must ferments slowly at a temperature of 18-25 °C with selected yeasts. a part of the must, filtered swiftly, is left in refrigerated tanks at a temperature of 0 °C. The Grasparossa wine undergoes a second fermentation in an autoclave. Once the desired pressure and residual sugar have been obtained, the sparkling wine is bottled.
