This pink Champagne is crafted from 50% Chardonnay, 25% Pinot Meunier and 25% Pinot Noir. It is quite unusual to have such a high percentage of white wine in a sparkling rosé, though the high percentage of Chardonnay is vital to the wine’s freshness and acidity. Its blush is wonderfully appealing; the bubbles, creamy and smooth; and on the palate, beautiful notes of raspberry, strawberry mousse, brioche and butter. It’s a great bottle for any occasion, sipped on its own, or paired with seafood and fish dishes, such as trout or salmon with creamy, buttery sauces. 93/100 Natalie Maclean This Rosé illustrates the determination to balance intensity with elegance, rosé with complexity, frivolity with quality. We want this Rosé to go along with every kind of occasions and invite to the most daring food pairings. The duo Chouilly and Les Riceys serves this predominantly Chardonnay cuvée. Pinot Noir from Les Riceys is traditionally macerated without destemming, a local tradition we voluntarily chose to pay tribute to. Its appears to be a fantastic way of harnessing Les Riceys’ full potential. To help tell this tale chardonnay comes in to highlight the wide aromatic spectrum of the Pinot Noir without being overwhelming. This wine is maturated in stainless steel tanks for eight months and in bottle for two to three years. After the “dégorgement“, bottles rest again for three to six extra months in our cellars before being delivered.
