Area of production: Valpolicella
Soil: mostly white and red soils rich in debris, calcareous marls and basalt
Grape varieties: Corvina 70% – Rondinella 20% – Molinara 5% – Croatina 5%
Alcohol: 16% vol.
Colour: intense ruby red with garnet tinges
Bouquet: rich nose with notes of dark fruit, coffee, cocoa and sweet spices
Taste: full body, warm and harmonious wine with a long aftertaste reminding of ripe dark fruit, with a touch of wood
Harvest: highly selected grapes from hillside vineyards, picked by hand into trays
Winemaking: 4-month natural drying followed by a traditional skin contact for 6-8 weeks
Ageing: in clay pots, oak barrels and tonneaux for 4 years, subsequently in bottle before release
Consumption: within 10-15 years at 18° degrees. To be uncorked 2/4 hours before the consumption
Food pairing: red meat, Florentine steak, venison and wild boar meat, aged cheeses or perfect as meditation wine
